  • 1.5 cups almond flour Make sure it's gluten-free certified.
  • 0.5 cups cocoa powder Ensure it's gluten-free.
  • 1 tsp baking soda
  • 0.5 tsp salt
Wet Ingredients
  • 3 large eggs, room temperature Helps create a smoother batter.
  • 1 cup granulated sugar
  • 0.5 cups unsalted butter, melted Can substitute with coconut oil for dairy-free.
  • 1 tsp vanilla extract
  • 1 cup buttermilk Can substitute with dairy-free milk + 1 tbsp lemon juice.
  • 1 cup semi-sweet chocolate chips Optional, but highly recommended.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Prepare two 8-inch round cake pans by greasing them and lining the bottoms with parchment paper.
  2. In a large mixing bowl, whisk together almond flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, beat the eggs with granulated sugar until slightly thick and pale, about 2-3 minutes.
  4. Stir in the melted butter and vanilla extract until fully combined.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with dry ingredients. Mix until just combined.
  6. Gently fold in the chocolate chips.
  7. Divide the batter evenly between the prepared cake pans.
Baking
  1. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the cakes cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Notes

Using parchment paper helps the cakes come out easily. Consider using high-quality cocoa powder for a richer flavor. Let the cake cool completely before frosting.
