Preparation
- Gather all the ingredients. Wash the spinach and cucumbers, then slice the tomatoes and cucumbers thinly.
- In a small bowl, mash the ripe avocado to your desired texture, seasoning with a pinch of salt and pepper.
- Lay the tortilla on a clean surface and spread the mayonnaise evenly over it, leaving space around the edges.
Assembly
- Layer the mashed avocado, turkey slices, spinach, sliced tomatoes, cucumbers, and cheese (if using) on the tortilla.
- Start from one end and roll the tortilla tightly, tucking the filling in as you go.
- Once wrapped, slice the tortilla in half diagonally and serve fresh or wrapped in foil for later.
Notes
To prevent the mashed avocado from browning, add a little lime juice. Customize with your favorite veggies or spreads. Store wrapped in an airtight container for up to 2 days.
