Preparation
- In a medium bowl, combine the drained tuna, mayonnaise, Dijon mustard, lemon juice, chopped celery, and diced red onion. Mix until well combined. Season with salt and pepper to taste.
Assembly
- Lay a tortilla flat on a clean surface. Spoon one-quarter of the tuna salad mixture onto the center of the tortilla, then sprinkle with shredded cheese.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Repeat with the remaining tortillas and filling.
Grilling
- Heat a skillet over medium heat. Add a teaspoon of butter or olive oil. Once hot, place the wraps seam side down in the skillet. Grill for about 2-4 minutes, or until golden brown and the cheese begins to melt.
- Carefully flip each wrap and grill the other side for an additional 2-4 minutes. Remove from heat and let them rest for a minute before slicing in half.
