Preparation
- Cook the rice according to package instructions. Set aside keeping it warm.
- In a large skillet, heat olive oil over medium heat. Add diced chicken, chili powder, cumin, salt, and pepper, stirring and cooking for about 5-7 minutes until the chicken is cooked through and golden.
- In a separate bowl, combine corn, Cotija cheese, mayonnaise, lime juice, and chili powder for the street corn topping. Mix until well combined and set aside.
Assembly
- In each bowl, start with a scoop of rice, top it generously with cooked chicken.
- Spoon the street corn topping over the chicken.
- Garnish with fresh cilantro and lime juice, adding avocado slices if desired.

Notes
