  • 1 cup corn kernels (fresh, frozen, or canned) Ensure they are thawed if frozen.
  • 1/2 cup crumbled Cotija cheese (or feta cheese) Adds creaminess and saltiness.
  • 1/4 cup mayonnaise (or Greek yogurt) For a lighter option, use Greek yogurt.
  • 1 tablespoon lime juice Fresh lime juice recommended.
  • 1 teaspoon chili powder (for garnish) Sprinkle on top before serving.

Method
 

Preparation
  1. Cook the rice according to package instructions. Set aside keeping it warm.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken, chili powder, cumin, salt, and pepper, stirring and cooking for about 5-7 minutes until the chicken is cooked through and golden.
  3. In a separate bowl, combine corn, Cotija cheese, mayonnaise, lime juice, and chili powder for the street corn topping. Mix until well combined and set aside.
Assembly
  1. In each bowl, start with a scoop of rice, top it generously with cooked chicken.
  2. Spoon the street corn topping over the chicken.
  3. Garnish with fresh cilantro and lime juice, adding avocado slices if desired.
