  • 1 pound breakfast sausage (pork or turkey)
  • 4 large eggs
  • 1/4 cup whole milk Can substitute with almond or oat milk.
  • 1 cup shredded cheddar cheese Can substitute with any cheese of choice.
  • 4 large sandwich rolls or burger buns
  • 2 tablespoons butter For toasting the rolls.
  • Salt and pepper to taste
Optional Garnish
  • Fresh herbs like chives or parsley For garnish.

Method
 

Cooking the Sausage
  1. In a large skillet, cook the breakfast sausage over medium heat for about 5-7 minutes, breaking it apart with a spatula until browned and fully cooked.
Preparing the Eggs
  1. While the sausage cooks, crack the eggs into a bowl. Add the milk and season with salt and pepper. Whisk until fluffy.
  2. Once the sausage is done, push it to the side of the skillet. Pour the eggs into the remaining space and cook for about 3 minutes, stirring gently until just set. Fold in the cheese and mix with the sausage to combine.
Toasting the Rolls
  1. Heat another skillet over medium heat. Spread butter on the outside of each sandwich roll, then toast them in the skillet until golden brown.
Assembling the Breakfast Rolls
  1. Once the rolls are toasted, scoop generous portions of the sausage and egg mixture into each roll.
  2. For added flavor, sprinkle fresh herbs on top, if desired. Serve immediately and enjoy!

Notes

Don’t overcook the eggs; remove them from heat while they’re still slightly runny to ensure a creamy texture. Feel free to swap the breakfast sausage for a plant-based alternative or add vegetables to customize.
