Ingredients
  

Pancake Buns
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1/4 cup maple syrup for flavor
Sandwich Filling
  • 4 large eggs
  • 4 pieces sausage patties or bacon, if preferred
  • 4 slices cheddar cheese
  • to taste additional maple syrup for drizzling (optional)

Method
 

Preparation
  1. In a medium bowl, combine the flour, sugar, baking powder, and salt. Whisk these dry ingredients until fluffy.
  2. In another bowl, beat together the milk, egg, melted butter, and maple syrup. Combine the wet and dry ingredients until just blended. Do not overmix; some lumps are okay!
Cooking Pancakes
  1. Heat a griddle or non-stick skillet over medium heat. Lightly grease it.
  2. Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for about 2-3 minutes, or until bubbles form on the surface. Flip and cook for another 2 minutes, until golden brown.
Preparing Filling
  1. While your pancakes are cooking, fry the sausage patties in another skillet over medium heat until browned and cooked through, about 4-5 minutes per side.
  2. In the same skillet, crack the eggs, season them with salt and pepper, and cook them sunny side up or scrambled, depending on your preference.
Assembly
  1. Once your pancakes, sausage, and eggs are ready, it’s time to assemble. Place a sausage patty on one pancake, top it with a slice of cheese, and then an egg. Finish off with another pancake on top.
  2. If you like, drizzle some additional maple syrup on the inside before closing it up!
Serving
  1. Serve immediately while warm, and watch everyone dig in! These sandwiches taste best fresh off the griddle.

Notes

Use high-quality maple syrup for the best flavor. Feel free to substitute the sausage with turkey or plant-based alternatives.
