Preparation
- In a medium bowl, combine the flour, sugar, baking powder, and salt. Whisk these dry ingredients until fluffy.
- In another bowl, beat together the milk, egg, melted butter, and maple syrup. Combine the wet and dry ingredients until just blended. Do not overmix; some lumps are okay!
Cooking Pancakes
- Heat a griddle or non-stick skillet over medium heat. Lightly grease it.
- Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for about 2-3 minutes, or until bubbles form on the surface. Flip and cook for another 2 minutes, until golden brown.
Preparing Filling
- While your pancakes are cooking, fry the sausage patties in another skillet over medium heat until browned and cooked through, about 4-5 minutes per side.
- In the same skillet, crack the eggs, season them with salt and pepper, and cook them sunny side up or scrambled, depending on your preference.
Assembly
- Once your pancakes, sausage, and eggs are ready, it’s time to assemble. Place a sausage patty on one pancake, top it with a slice of cheese, and then an egg. Finish off with another pancake on top.
- If you like, drizzle some additional maple syrup on the inside before closing it up!
Serving
- Serve immediately while warm, and watch everyone dig in! These sandwiches taste best fresh off the griddle.

Use high-quality maple syrup for the best flavor. Feel free to substitute the sausage with turkey or plant-based alternatives.
