Preparation
- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
- On a lightly floured surface, roll out the thawed puff pastry sheets to about 1/8 inch thickness and cut into squares (4x4 inches).
- Place a generous tablespoon of mascarpone filling in the center of each square.
- Fold the square diagonally to form a triangle and pinch the edges tightly to seal.
- In a small bowl, whisk together the egg and milk, then brush over the top of each pastry.
Baking
- Place the pastries on a parchment-lined baking sheet and bake for 15-18 minutes, or until puffed up and golden brown.
Serving
- Allow to cool for a few minutes before serving. Dust with powdered sugar and optionally top with fresh berries or chocolate shavings.
Notes
Keep everything cold for a flaky texture. Experiment with flavors by adding lemon zest or chocolate to the filling. You can assemble and freeze the pastries in advance.
