Ingredients
  

For the Honey BBQ Chicken
  • 1.5 pounds 4 boneless, skinless chicken breasts
  • 1 cup honey BBQ sauce store-bought or homemade
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
For the Garlic Parmesan Potatoes
  • 2 pounds baby potatoes, halved
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 teaspoons dried parsley
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the chicken breasts with olive oil, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
  3. Transfer the seasoned chicken to a baking dish and pour half of the honey BBQ sauce over the top. Make sure to coat the chicken well.
Roasting the Chicken
  1. Place the chicken in the preheated oven and roast for 20 minutes.
  2. After 20 minutes, flip the chicken breasts and brush the remaining BBQ sauce on top. Return to the oven and roast for an additional 10–15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
Preparing the Garlic Parmesan Potatoes
  1. While the chicken is cooking, prepare the potatoes. In a large mixing bowl, combine the halved baby potatoes, melted butter, minced garlic, Parmesan cheese, parsley, salt, and pepper.
  2. Toss everything together until the potatoes are thoroughly coated.
Baking the Potatoes
  1. Spread the garlic Parmesan potatoes in a single layer on a foil-lined baking sheet.
  2. Bake in the oven (alongside the chicken if space allows) for about 25–30 minutes, or until golden brown and crispy on the outside. Flip halfway through for even cooking.
Serving
  1. Once everything is done, plate your Honey BBQ Chicken with the Garlic Parmesan Potatoes. Garnish with a sprinkle of fresh parsley if desired.

Notes

To enhance the flavor, consider marinating the chicken in honey BBQ sauce for a few hours or overnight. For crispy potatoes, increase the oven temperature to 400°F (204°C) for the last 10 minutes while baking. Use fresh garlic for the best flavor.
