Ingredients
  

For the Chicken Marinade
  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1 piece lemon (juice) Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
For the Bowls
  • 2 cups cooked rice (white or brown)
  • 1 cup cherry tomatoes, halved
  • 1 piece cucumber, diced
  • 1/2 piece red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup Kalamata olives, pitted and halved
  • to taste Fresh parsley for garnish
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1/2 piece cucumber, grated and excess water squeezed out
  • 1 clove garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp fresh dill, chopped
  • Salt and pepper to taste

Method
 

Marinate the Chicken
  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add the chicken breasts and coat them well in the marinade. Cover and let them marinate for at least 15 minutes (or overnight if you have time).
Cook the Rice
  1. While the chicken marinates, prepare your rice according to package directions. For added flavor, cook it in chicken broth instead of water.
Grill the Chicken
  1. Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken for about 5-7 minutes per side, or until the internal temperature reaches 165°F. The chicken should be golden brown and juicy. Once cooked, let it rest for a few minutes, then slice it into strips.
Prepare the Tzatziki Sauce
  1. In a small bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, dill, salt, and pepper. Mix well and adjust seasoning to taste.
Assemble the Bowls
  1. In each bowl, start with a base of rice. Top with sliced grilled chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese. Drizzle some tzatziki sauce over the top and garnish with fresh parsley.
