Method
Marinate the Chicken
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, thyme, salt, and pepper. Add the chicken breasts and coat them well in the marinade. Cover and let them marinate for at least 15 minutes (or overnight if you have time).
Cook the Rice
- While the chicken marinates, prepare your rice according to package directions. For added flavor, cook it in chicken broth instead of water.
Grill the Chicken
- Heat a grill pan or outdoor grill over medium-high heat. Grill the chicken for about 5-7 minutes per side, or until the internal temperature reaches 165°F. The chicken should be golden brown and juicy. Once cooked, let it rest for a few minutes, then slice it into strips.
Prepare the Tzatziki Sauce
- In a small bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, dill, salt, and pepper. Mix well and adjust seasoning to taste.
Assemble the Bowls
- In each bowl, start with a base of rice. Top with sliced grilled chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese. Drizzle some tzatziki sauce over the top and garnish with fresh parsley.
Serve and Enjoy
- These Greek Chicken Bowls are best enjoyed fresh. Serve immediately and watch everyone delight in the vibrant flavors and textures.
Notes
If you’re short on time, you can use pre-cooked rotisserie chicken, making this meal even quicker. Marinate longer for flavor and consider customizing your bowl with preferred ingredients.
