- In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until smooth.
- In a separate bowl, beat the egg and mix in the milk, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients and gently stir until just combined; a lumpy batter is okay.
- Let the batter rest for about 5-10 minutes to activate the baking powder.
Cooking
- Preheat a non-stick skillet or griddle over medium heat.
- Pour about ¼ cup of batter for each pancake onto the hot skillet. Cook until bubbles form and edges are set, about 2-3 minutes.
- Flip and cook for another 1-2 minutes until golden brown.
- Serve warm with your favorite toppings.
Notes
For best results, don’t over-mix the batter and check the freshness of your baking powder. You can customize with chocolate chips or fruits as add-ins.
