  • 1.5 cups all-purpose flour
  • 3.5 tsp baking powder Ensure it's fresh for fluffiness.
  • 1 tbsp sugar
  • 0.5 tsp salt
Wet Ingredients
  • 1.25 cups milk Whole or almond milk works great.
  • 1 large egg
  • 3 tbsp unsalted butter (melted)
  • 1 tsp vanilla extract Optional for additional flavor.

Preparation
  1. In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt until smooth.
  2. In a separate bowl, beat the egg and mix in the milk, melted butter, and vanilla extract.
  3. Pour the wet mixture into the dry ingredients and gently stir until just combined; a lumpy batter is okay.
  4. Let the batter rest for about 5-10 minutes to activate the baking powder.
Cooking
  1. Preheat a non-stick skillet or griddle over medium heat.
  2. Pour about ¼ cup of batter for each pancake onto the hot skillet. Cook until bubbles form and edges are set, about 2-3 minutes.
  3. Flip and cook for another 1-2 minutes until golden brown.
  4. Serve warm with your favorite toppings.

Notes

For best results, don’t over-mix the batter and check the freshness of your baking powder. You can customize with chocolate chips or fruits as add-ins.
