  • 14 oz sweetened condensed milk Use a non-dairy alternative for vegan version.
  • 2 cups powdered sugar Adjust based on the sweetness of coconut.
  • 1 teaspoon vanilla extract Enhances flavor.
  • 1 pinch salt Balances sweetness.
  • food coloring Optional for decoration.

Method
 

Preparation
  1. Line an 8x8 inch square baking dish with parchment paper, leaving some overhang.
  2. In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, powdered sugar, vanilla extract, and a pinch of salt. Mix until well combined.
  3. If using food coloring, divide the mixture into two bowls, leaving one plain and adding food coloring to the other. Mix well.
  4. Press the plain coconut mixture into the bottom of the baking dish firmly.
  5. Spread the colored mixture evenly on top of the plain layer.
  6. Cover with plastic wrap and refrigerate for at least 2 hours.
  7. Once set, lift the coconut ice out using the parchment overhang and cut into squares.

Notes

For best results, use fresh ingredients and allow enough time in the fridge to set. Experimenting with flavors like almond extract or citrus zest can add a unique twist.
