Chicken Lo Mein

Ingredients
  

Main Ingredients
  • 8 oz Lo Mein noodles (or spaghetti)
  • 1 lb boneless, skinless chicken breast, sliced thin
  • 2 cups mixed bell peppers (red, yellow, green), sliced
  • 1 cup carrots, julienned
  • 1 cup snap peas or snow peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 4 tablespoons soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 2 tablespoons vegetable oil (or peanut oil)
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water for thickening

  • as needed sliced green onions and sesame seeds for garnish

Method
 

Cooking Noodles
  1. Bring a large pot of water to a boil.
  2. Add the Lo Mein noodles and cook according to package instructions, usually about 5-7 minutes until al dente.
  3. Drain and rinse the noodles under cold water to stop the cooking process. Set aside.
Sautéing Chicken
  1. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  2. Add the sliced chicken, seasoned with salt and pepper. Cook for about 5-6 minutes, stirring occasionally until golden brown and cooked through. Remove chicken and set aside.
Cooking Vegetables
  1. In the same skillet, add the remaining tablespoon of vegetable oil.
  2. Once hot, toss in minced garlic and ginger, stirring quickly for about 30 seconds.
  3. Add sliced bell peppers, carrots, and snap peas; stir-fry for about 3-4 minutes until tender but still crisp.
Combining Ingredients
  1. Return the cooked chicken to the skillet.
  2. Pour in soy sauce, oyster sauce, and sesame oil.
  3. Stir in the cornstarch mixture to thicken the sauce, mixing thoroughly to coat chicken and vegetables.
Adding Noodles
  1. Gently add the cooked noodles to the skillet and toss everything together for 2-3 minutes, ensuring noodles are well-coated with sauce.
Serving
  1. Remove from heat and serve hot.
  2. Garnish with sliced green onions and sprinkle sesame seeds on top.

Notes

Feel free to add other vegetables you enjoy or substitute chicken with tofu for a vegetarian option. Pair with egg rolls or spring rolls for a complete meal.
