Cooking Noodles
- Bring a large pot of water to a boil.
- Add the Lo Mein noodles and cook according to package instructions, usually about 5-7 minutes until al dente.
- Drain and rinse the noodles under cold water to stop the cooking process. Set aside.
Sautéing Chicken
- In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add the sliced chicken, seasoned with salt and pepper. Cook for about 5-6 minutes, stirring occasionally until golden brown and cooked through. Remove chicken and set aside.
Cooking Vegetables
- In the same skillet, add the remaining tablespoon of vegetable oil.
- Once hot, toss in minced garlic and ginger, stirring quickly for about 30 seconds.
- Add sliced bell peppers, carrots, and snap peas; stir-fry for about 3-4 minutes until tender but still crisp.
Combining Ingredients
- Return the cooked chicken to the skillet.
- Pour in soy sauce, oyster sauce, and sesame oil.
- Stir in the cornstarch mixture to thicken the sauce, mixing thoroughly to coat chicken and vegetables.
Adding Noodles
- Gently add the cooked noodles to the skillet and toss everything together for 2-3 minutes, ensuring noodles are well-coated with sauce.
Serving
- Remove from heat and serve hot.
- Garnish with sliced green onions and sprinkle sesame seeds on top.
Notes
Feel free to add other vegetables you enjoy or substitute chicken with tofu for a vegetarian option. Pair with egg rolls or spring rolls for a complete meal.
