  • 1/2 cup chopped bell peppers (any color)
  • 1/4 cup chopped green onions
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a muffin tin (12-cup) with cooking spray or a little olive oil.
  3. In a medium bowl, whisk together the eggs until fully combined and frothy.
  4. Stir in cottage cheese, shredded cheese, bell peppers, green onions, salt, black pepper, garlic powder, and onion powder.
  5. Pour the mixture evenly into the greased muffin tin, filling each cup about 3/4 full.
Baking
  1. Bake in the preheated oven for 20-25 minutes until golden brown, and a toothpick inserted comes out clean.
  2. Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack.
