Ingredients
  

For the Stuffing
  • 8 slices thick-cut brioche or challah bread Any bread of your choice can be used.
  • 8 strips cooked bacon, chopped Turkey bacon or a plant-based alternative can be used for a lighter version.
  • ½ cup pure maple syrup Preferably pure maple syrup.
  • 2 tablespoons bourbon Feel free to adjust to taste.
For the Egg Mixture
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 pinch salt
For Cooking
  • to taste butter or oil For cooking in the skillet.

Method
 

Preparation
  1. In a mixing bowl, combine the cooked bacon, maple syrup, and bourbon. Mix well and set aside.
  2. In another bowl, whisk together eggs, milk, vanilla extract, cinnamon, and a pinch of salt until well combined.
Assembly and Cooking
  1. Gently cut a pocket in each slice of bread and stuff each pocket with the bourbon bacon mixture.
  2. Preheat a non-stick skillet over medium heat and add butter or oil.
  3. Dip each stuffed slice into the egg mixture, allowing it to soak for a few seconds.
  4. Cook in the skillet for about 3-4 minutes on each side until golden brown and crispy.
Serving
  1. Transfer to plates and drizzle with additional maple syrup. Garnish with fresh fruit or powdered sugar if desired.

Notes

For a healthier option, swap bacon for turkey bacon or a plant-based alternative. Store leftovers in an airtight container in the refrigerator for up to 3 days.
